Sebze
Antalya is one of the largest protected-cultivation districts in the Mediterranean and tomato is what it grows. The programme runs October to June — the inverse of northern European production — which is the whole commercial point.
Four types cover the market: beef for slicing and food service, cluster on the vine for retail, cherry and cocktail for premium punnet lines. Cluster is the volume export item and the one to specify carefully, because truss presentation, calyx colour and the number of fruit per truss all vary by grower and all get rejected on at destination.
Tomato is picked to a defined colour stage — usually stage 3 to 4 for export — and the single most common cause of a claim is carrying it too cold. Below +10 °C tomato loses the capacity to develop flavour and aroma compounds. It will still redden; it will not taste of anything.

Large round slicing tomato, 180 to 250 g, deep red with firm walls and a small seed cavity. Brix 4.0–4.8°. Picked at colour stage 3 for export and the standard for food service and sandwich programmes.
Vine tomato sold on the truss, typically five to seven fruit at 100 to 140 g each. Even ripening along the truss and a green, turgid calyx are what the fruit is graded on. Brix 4.2–5.0°. The volume export item.
Small round fruit at 15 to 25 g, sold loose or on the truss, with markedly higher sugar than the large types at 7.0–9.0° brix. Thin skin, prone to splitting if irrigation is uneven. Premium punnet programmes.
Between cherry and cluster at 30 to 50 g, usually sold on the vine. Brix 5.5–7.0°, firmer skin than cherry and better transit tolerance. A growing retail segment and the best margin in the tomato range.
Elongated oval fruit at 70 to 110 g with thick walls, low seed content and dense flesh. Brix 4.5–5.5°. Grown for food service and for buyers supplying processing or sauce lines. The most robust tomato in transit.
