Fruits
Apples come from altitude, not from the coast. Isparta, Karaman and Niğde sit between 1,000 and 1,400 metres, and the wide day–night temperature swing at that elevation is what puts colour on Starking and firmness into Granny Smith.
The commercial point of apple is storage, not harvest. Picking runs September to November, but controlled-atmosphere rooms at 1.5 % O₂ / 1.2 % CO₂ carry Granny Smith and Fuji through to June, which makes apple the one product in our range with a genuinely year-round window. Pressure and starch index at pick determine how long a lot will hold, and we report both.
Apple is a heavy ethylene producer. It must not share a container with kiwi, leafy vegetables or any climacteric fruit you want to arrive unripe — a mixed load is the most common cause of a claim on this product.

Bright green, very firm, high acid, and the best storer in the range — CA rooms carry it to June with pressure still above 6 kg. Brix 11–13° against markedly high acidity, which is what gives it the sharp eating character. Sizes well at 70–80 mm.
Golden-yellow with a fine russet at the stem, sweet and low-acid at 12–14° brix, with softer flesh than Granny Smith. The volume variety of the Turkish crop. Stores well in CA to May but loses pressure faster than Granny or Fuji.
The classic deep-red striped apple with a distinctly ribbed base and five crown points. Sweet, aromatic, low acid at 12–14° brix, with tender flesh that does not tolerate rough handling. Altitude is what gives it colour — the highland blocks run 90 % or better red coverage.
Dense, very sweet and exceptionally crisp, brix 14–16° — the highest sugar in our apple range. Pink-red over a yellow-green ground, often with lenticel spotting that is cosmetic. Stores as well as Granny Smith and holds crunch to June.
The early variety, picked from mid-August. Smaller, round, orange-red striped over cream, sweet and aromatic at 12–14° brix with fine crisp flesh. Short storage life relative to the main crop — it is sold rather than held.
