Fruits
Cherry is a six-week programme and the most operationally demanding product in the range. Ziraat 0900 — Napoleon under its Turkish selection name — is the variety the export market wants: very large, firm, bright red, with a stem that stays green if the fruit is handled cold.
Everything depends on hydrocooling. Fruit goes from orchard to hydrocooler within two hours of picking and comes down to 2 °C before grading. A lot that sits warm on a trailer for an afternoon loses stem colour and firmness that it will never get back, and no amount of cold downstream recovers it.
Most volume moves by air from Istanbul and Izmir on 5 kg cartons with MAP liners; sea freight to Europe works on Regina and late Ziraat with a 21-day transit, but only for buyers who accept the risk profile. We quote both.

The Turkish export cherry and roughly 70 % of what we pack. Very large — 28 to 32 mm is normal on irrigated blocks — bright red turning dark, firm-fleshed, with high brix at 16–20° and a stem that holds green. It is the size and firmness that make it travel.
A late German variety that extends the season two to three weeks past Ziraat. Dark red, very firm, exceptionally crack-resistant in rain, 26–30 mm and 17–20° brix. The best sea-freight cherry we grow because of that firmness.
A dark, almost black-red mid-season cherry with a rounder shape and softer flesh than Ziraat. Very high brix at 18–21° and a deep sweet flavour, but it bruises easily and the window is narrow. Sold mainly to premium retail on flavour.
A yellow cherry with a pink blush, firm and crack-resistant, 24–28 mm at 15–18° brix. A niche variety sold on appearance into specialty and food service. It shows handling marks far more readily than a dark cherry.

Storage
Recommended regime from our cold rooms to your door.
Hydrocool to +2 °C within 2 hours of picking. Reefer set 0 °C with MAP liners. Air freight for anything above 28 mm.
