Overview

Zucchini is a straightforward protected-crop line out of Antalya, picked young and moved fast. Two types cover the market: the dark green Italian courgette that European retail expects, and the pale green Turkish type that dominates domestic and Middle Eastern demand.

The commercial variable is size and it is entirely about picking frequency. Export-grade fruit at 14 to 21 cm has to be cut every day or two in peak season; leave it three days and the crop is oversize and worth a fraction. Buyers specifying a tight size band should expect that reflected in the price.

The flower end is where it fails. A fruit picked with the flower attached looks fresher but rots faster, so we remove flowers at packing unless the buyer specifies otherwise for a specialty programme.

Dark green

The Italian courgette type: cylindrical, uniformly dark green with a faint speckle, 14 to 21 cm and 150 to 250 g. Firm flesh, glossy skin, and the European retail standard. Shows handling marks readily because of the dark skin.

Pale green (Turkish type)

The Turkish and Middle Eastern type: slightly tapered, pale green to grey-green, 12 to 18 cm and 120 to 200 g. Thinner skin and a more tender flesh than the dark type, and it hides handling marks better.

Yellow

Bright golden-yellow cylindrical fruit at 14 to 20 cm, grown for mixed retail packs and food service presentation. Same eating character as the dark green type but the skin is more delicate and it marks more easily in transit.
