Turkey is the largest apricot producer in the world, and Malatya alone accounts for most of it — though the bulk of that goes to drying rather than to the fresh trade. Our fresh programme is built on the coastal early varieties and the Malatya fresh selections.
Ninfa and Aurora out of Mersin and Antalya open in the second week of May under protected cultivation, which is three to four weeks ahead of the Malatya crop and is where the value sits. Roxana and the Malatya fresh lines run June into July.
Apricot is climacteric and it is picked at a compromise: firm enough to travel, mature enough to develop sugar. Picked green it never sweetens, only softens. We pick to a defined ground-colour and pressure spec per destination, and for anything beyond a 10-day transit we recommend a controlled-ripening protocol at destination rather than a riper pick.

The earliest variety and the one that opens the Turkish fresh apricot season under protected cultivation in Mersin. Medium, oval, bright orange with a red blush over about a third of the fruit. Brix 12–14°, firm at pick, and it colours well without being fully ripe.
An early variety a week behind Ninfa, larger and rounder with a deeper orange ground and more extensive blush. Brix 12–15°, firm flesh and a freestone pit. Better transit tolerance than Ninfa.
A large mid-season variety with firm orange flesh and the best handling tolerance in our range. Brix 13–16°, freestone, and it holds pressure long enough for sea freight to eastern Europe. The volume fresh variety from mid-June.
The classic Malatya variety and the backbone of the dried trade, but sold fresh in July as a small, intensely sweet, deep-orange fruit at 18–22° brix. Very high sugar and a distinctive aroma. Small size and soft flesh limit it to short-transit fresh programmes.

Reefer set +1 °C. Climacteric — carries ethylene, do not mix-load. Beyond 10 days, ripen at destination rather than picking riper.
