Overview

Potato comes from the volcanic highlands: Niğde, Nevşehir and Konya sit above 1,000 metres on light ash soils that grow a clean, well-shaped tuber with good skin finish. Adana supplies an early crop from April.

Variety selection follows end use and it is worth getting right. Agria is the long oval yellow-fleshed variety with 20 to 22 % dry matter — the frying and processing standard. Marfona is a round early with lower dry matter that boils and holds shape. Lady Rosetta is a crisping variety with very high dry matter and low reducing sugars.

Storage temperature is where processing buyers get caught. Table potato holds at +4 to +6 °C, but potato held that cold converts starch to reducing sugars and will fry dark. Anything destined for crisps or chips has to be stored at +8 to +10 °C with sprout suppression. We store to the end use, and we need to know it at order.

Agria

Long oval tuber with smooth yellow skin and deep yellow flesh, 20 to 22 % dry matter and shallow eyes. The frying and processing standard, and it stores exceptionally well to June. The volume export variety.

Peak season

Marfona

Round to oval early variety with pale yellow skin and light yellow flesh at 17 to 19 % dry matter. Firm and waxy — it boils and holds shape rather than breaking up. Earlier lift than Agria and a shorter storage window.

Lady Rosetta

Round red-skinned tuber with pale cream flesh, very high dry matter at 22 to 24 % and low reducing sugars. The crisping variety. Must be stored warm at +8 to +10 °C or it will fry dark regardless of dry matter.

Van Gogh
